Why is there a fail grade recorded against the course when I have deferred my exam?

Your current grade is entered next to your original enrolment for the course, and this will usually be a fail grade as the examination is commonly a large component of assessment.
You can view the secondary assessment type next to the enrolment, and the current grade will be displayed until the secondary assessment grade is finalised.
